Systems to trace food products through stages of production, processing and distribution play a key role in assuring food safety. Such traceability systems are typically based on a continuous paper-trail and effective labelling. However, there are analytical techniques that enable the provenance of food to be determined and that provide an independent means of verifying "paper" traceability systems. This book investigates the current multi-element analytical techniques that are used for determining the geographical origin of food products, discussing the principles of the techniques together with their advantages and drawbacks, and reported applications concerning geographical authenticity.
